Turn box is a very stable and compact knife sharpening system. It works well in the kitchen and can be quickly and easily stored in a drawer. Turn Box is also great for outdoor enthusiasts, because it is lightweight and easily stores in a backpack. It only takes few strokes to maintain a sharp edge (a little more if you knife is really dull). The system is therefore perfect not only for kitchen knives, but also for outdoor - for example hunting knives. Turn Box features 2 silver diamond rods of medium grit (600) and 2 white ceramic rods of fine grit (1000). All rods are 5" long and stored in a rod on the side of the base. Turnbox / base is from hardwood.
Pre-set angles for sharp edges
20° - for slicing, cutting, skinning or filet knives; for those, requiring a very sharp edge– lower degrees result in sharper edge, but require more regular maintenance
25° - fo hunting, outdoor and kitchen knives; provides sharp and durable edge
Instruction for use
Turn Box can be used for either 1 stage or 2 stage sharpening. Silver Diamond Rods are for sharpening and White Ceramic Rods for finishing/polishing.
Start - place Turn Box on a stable and flat surface at comfortable working height.
1 Stage Sharpening
Step 1 - choose the rods and angle you wish to sharpen with (20° nebo 25°), place the sharpening rods into the appropriate guide holes.
Step 2 - hold the base firmly with your non-dominate hand; make sure that your fingers are as far away from the rods as possible while still maintaining firm grip on the base.
Step 3 - hold the knife in your dominate hand and place the heel of the blade (closest to the handle) 2,5 cm or more below the top of one of the rods.
Step 4 - hold the blade straight up, perpendicular to the surface and draw the blade down the rod and towards you; this motion is similar to slicing bread.
Step 5 - repeat on the other rod.
Step 6 - repeat alternation of the rods(steps 3, 4 and 5) until you achieve desired sharpness; 10 - 20 strokes on each side should be sufficient.
2 Stage Sharpening
Step 1 - follow the safety instructions mentioned above; begin by placing the rods in the 20° angle holes and follow the sharpening instructions as listed above, but use only 10 - 12 strokes on each rod; this is to thin the blade´s edge.
Step 2 - move the rods to the 25° angle holes for stage 2 sharpening to finish the edge; follow the same technique used before; this will produce durable and sharp compound bevel.
Pro tip: To achieve the best results use only light pressure and avoid rolling the tip of the knife off the rod. This could damage the tip and leave it duller than the rest of the blade. Slow hand and patience are recommended.
Cleaning instructions: Over the time the rod becomes dark with metal particles,making it less efficient. When that happens, switch to the other side. When the rods become dark all over, use Lansky Eraser
Block or kitchen cleanser to clean it.
Note: The ceramic rod will never wear out, it is solid and durable, but because it is ceramic, it can brake when fall on the hard ground. Handle with care.
Caution: Never apply oil to diamond surface,this could clogged pores and therefore cause unfunctionality. Clean it with water and wipe shavings away with a lint-free cloth. Rod should be completely dry before next use.
